The shop usually has about a dozen kinds on offer, from stalwarts such as chocolate chip and oatmeal raisin to rarities such as chocolate tuiles and lemon drops.

 Loafers is a friendly little shop packed to the rafters (literally) with treats both savory and sweet. As soon as you walk in, you're confronted by a mouthwatering display of cookies - butter. The shop usually has about a dozen kinds on offer, from stalwarts such as chocolate chip and oatmeal raisin to rarities such as chocolate tuiles and lemon drops.

The cookies could easily pass for homemade and, according to co-owner Lauren Foley, they sometimes do. "There are a lot of big estates around here," she said. "Sometimes the cooks come in with the Villeroy and Boch platters, and we'll make it look like the stuff came from their kitchen."

Most of the shop's business, however, is completely straightforward. "We've been serving these customers for generations," Foley said. "We did their birthday cakes when they were children, and now they're coming in for their own children's birthday cakes."

The Lipsky family took over Loafers 22 years ago. Daughter Lauren, then a Lipsky, had finished cooking school at NY Tech in Commack and was working in the store with the previous owner. When she learned it was for sale, she went home and asked her parents, "Would you like to own a bakery?" Now her father, George, handles the business end; her mother, Joan, is in charge of savory cooking; brother Wesley runs the kitchen. Lauren is in charge of buying, managing, merchandising ... and everything else.

In addition to baked goods, Loafers has a freezer stocked with chicken potpies, beef stroganoff, beef Bourguignon, Swedish meatballs, bacon-wrapped water chestnuts - and a refrigerated case full of soups and dips, the raciest of which are salsa and guacamole.
