“Mediterranean and Middle Eastern” is a catchall term describing the cuisine of such nations as Greece, Turkey, Lebanon, Afghanistan, Azerbaijan, Iran, Israel and Egypt. The region is a hotbed of flavors.
Although there may be significant differences from one country to another, most make use of the following ingredients in their cookery: olive oil, honey, lemon, rice, eggplant, parsley, chick peas and mint.
Here on Long Island, you're practically guaranteed to find some version of hummus as well as a variety of kebabs (grilled skewered meats) at any of the following Middle Eastern/Mediterranean restaurants.
