The new L.I. branch of a Colorado-based chain specializes in noodle and pasta dishes. Here, you can get gluten-free noodles in most every preparation. Which means that pad Thai and noodles with pesto are available to all.

This pizzeria-trattoria has, for many years, offered a separate gluten-free menu. Notify your server and you'll be brought gluten-free bread. The place offers a surprisingly light eggplant Parmigiana, breaded with gluten-free crumbs and served with gluten-free ziti.

Your server will suggest getting it over zucchini "noodles" -- actually raw zucchini ribbons that are briefly sauteed. The result is a triumph for low-fat, low-carb and gluten-free eating. In the same category: the lush vegetarian three-cheese zucchini "lasagna" using those same ribbons in place of pasta sheets.
