Many people are unable to tolerate the gluten found in wheat, rye, malt, barley and oats. Today, many restaurants are offering gluten-free substitutes. Here are just four places to find them.

NOODLES & COMPANY, The Gallery at Westbury Plaza, 996 Old Country Rd., Garden City

The new L.I. branch of a Colorado-based chain specializes in noodle and pasta dishes. Here, you can get gluten-free noodles in most every preparation. Which means that pad Thai and noodles with pesto are available to all.

MAMA'S ITALIAN RESTAURANT, 1352 Montauk Hwy., Oakdale, 631-567-0909

This pizzeria-trattoria has, for many years, offered a separate gluten-free menu. Notify your server and you'll be brought gluten-free bread. The place offers a surprisingly light eggplant Parmigiana, breaded with gluten-free crumbs and served with gluten-free ziti. 

SAVINO'S RESTAURANT & WINE BAR, 88 Atlantic Ave., Lynbrook, 516-596-1600

At this pizza-pasta restaurant, most dishes can be customized with gluten-free bread crumbs, pasta and pizza crusts. This means everyone can have their chicken Parm with pasta.

ABEETZA NEXT DOOR, 82 Glen Cove Road, 516-484-3123, Greenvale

The handsome Italian and pizza spot has a runaway hit in its angry shrimp, plump shellfish in a fiery marinara. Your server will suggest getting it over zucchini "noodles" -- actually raw zucchini ribbons that are briefly sauteed. The result is a triumph for low-fat, low-carb and gluten-free eating.  In the same category: the lush vegetarian three-cheese zucchini "lasagna" using those same ribbons in place of pasta sheets.
