Great restaurants for vegetarians

Long Island vegetarians have plenty to beef about: few restaurants devoted to them and slim pickings wherever they go.
The problem at most nonvegetarian restaurants is that meat can sneak into the most meatless-seeming dishes. Ask what the butternut squash soup is made with, and chances are it's chicken stock.
True, there's always pizza, pasta, eggplant Parmesan and the ubiquitous veggie burger to rely on, but you could bore yourself to death on such limited fare. Fortunately, you don't have to, if you're willing to go out of your way a little.
Vegetarians (and vegans, who don't eat any animal products, including dairy) are taken seriously and fed knowingly at the places we've scouted out - from casual American cafe to romantic Mediterranean retreat offering a wide assortment of cuisines and settings.
