As the season of renewal and transformation begins, look for a restaurant to refresh your appetite. Here are three that definitely do that.

Chachama Grill in East Patchogue is situated in a shopping center on Montauk Highway, Find it to enjoy baby beet salad with red onion, shrimp seviche with cilantro and poblano peppers, dry sea scallops with spaghetti squash and mushrooms, rack of pork with pineapple chutney, rice pudding with caramelized bananas.

Upbeat and full-flavored, Market Bistro in Jericho is an all-seasons, farm-to-table magnet. Sample lamb sliders with chickpea salad and harissa aioli, orecchiette with lamb ragu, baby beet salad with grilled romaine and goat cheese, rice balls accented with pecorino cheese and mushrooms, Berkshire pork chop with braised escarole.

Orto, the Miller Place offspring of Kitchen A Bistro and Kitchen A Trattoria in St. James, has its own savory niche. The menu changes frequently.
