Toasting the repeal of Prohibition

Prohibition was repealed 80 years ago today.

That calls for a drink.

Ironically, it was Utah, a state still known for its strict limits on alcohol, that ratified the 21st Amendment to the Constitution. No. 21 repealed No. 18. It ended 13 years defined less by a drop in drinking than a rise in crime.

So, raise a glass. Here are three classic cocktails that will make for a very celebratory day, night and points in-between. One is made with gin, another with rye, a third with bourbon.

French 75: Shake with ice 1ounce gin, 1/2 ounce lemon juice and 1/2 ounce simple syrup. Strain into a chilled coupe. Top with 1 ounce Champagne. Garnish with a twist of lemon. Adapted from  "The PDT Cocktail Book." by Jim Meehan and Chris Gall.

Manhattan: Combine 1-2/3 ounces rye, 2/3 ounce sweet vermouth, 2 dashes Angostura bitters in a mixing glass with ice. Stir. Strain into a chilled cocktail glass. Garnish with a maraschino cherry -- or not. Adapted from "Cocktails By Flavors" by Salvatore Calabrese.

Old Fashioned: Stir 1-1/2 shots bourbon with 2 ice cubes in a glass. Add 1/2 shot simple syrup,  3 dashes Angostura bitters and 2 more ice cubes. Add 1-1/2 more shots of bourbon. Stir. Add more ice. Adapted from "Cocktails: The Bartender's Bible" by Simon Difford.
