Open: Shuko Beach in Wainscott
Long Island's insatiable appetite for sushi is being fed a bit more by a new Hamptonian.
Shuko Beach, a pop-up Asian restaurant specializing in chef's-choice dinners, has moved into the Montauk Highway address recently occupied by Highway Diner & Bar.
The sleek establishment is overseen by chefs Nick Kim and Jimmy Lau, formerly of Neta in Manhattan. Shuko NYC is expected to open in autumn.
The 90-seat newcomer, with a 12-seat sushi-sashimi bar, is open for dinner six days, from 5:30 p.m. to midnight. It's closed on Tuesday. Lunch is expected to start soon.
Shuko Beach features sushi and sashimi; small plates such as Dungeness crab salad, scallop crudo, and local fluke finished with almonds, pickled tomatoes and orange oil; and larger ones including spicy lobster with clams, crab and shrimp; whole branzino with roasted clams and grilled tomatoes.
Also offered are steamed black bass; tempura of soft-shell crab, soft-shell shrimp and local vegetables; and grilled king crab.
Chef's tastings of sashimi and sushi are $95. Small plates: $21 to $24; large plates, $58 to $75.
