Baked, fried and stewed chicken, along with turkey meat loaf and fried whiting are just some of the dishes served at Carolyn’s Cuisine, a soul food restaurant that just opened in the former Amityville digs of Sweet & Spicy.

What you won’t find on the menu, though, is pork. Owner Joan Carolyn Thompson,  who also is a certified nursing assistant, said she feels that pork is not the healthiest meat to eat. Instead, the collard greens here are cooked with smoked turkey wings.

In charge of the kitchen is Thompson’s son, Eric Delgado, who previously cooked at CoolFish in Syosset. While he offers a variety of dishes, only a few are featured on a given day. On Wednesday, for instance, you can get barbecue or baked chicken ($9 for 2 pieces, $11 for 3 pieces) or peppered steak ($10.50 for small order; $12 for large order). All plates come with two sides, among  them  mac and cheese, turnip greens, cornbread stuffing and yam pudding.

As soon as the restaurant is more settled, Thompson said she will be making all desserts, such as cheesecake and banana pudding.

The counter-serve place features takeout as well as sit-down dining on-site.
