New season, new chefs at Trata in Water Mill

Trata, the high-end Greek seafood restaurant, reopens in Water Mill tonight with two new chefs in the kitchen.

Executive Chef Greg Ling, who recently left The Riverhead Project, succeeds chef Luis Falcon, who earned Trata a three-star rating in Newsday at the now-closed Roslyn branch. Falcon also was chef in Water Mill. Chef de cuisine Stavros Arampatzidis comes to Water Mill from Thessaloniki, Greece.

Trata is best-known for its chargrilled, whole fish, sold by the pound. The Water Mill restaurant is open six days for dinner, closed on Monday. A rotating roster of DJs will be at Trata's lounge on Fridays and Saturdays, for "Greek Nights." The first is Alex Kouros.

The restaurant also is expected to launch a series of brunch parties on the patio, beginning tomorrow.
