Tonight at 5 p.m., Cilantro Mexican Inspired Food gets cooking in the former Northport digs of The Original Kasper’s Hot Dogs. The new counter-serve eatery shares ownership with the nearby Nina’s Pizzeria.

The setup at Cilantro resembles the one at Chipotle Mexican Grill. Move down a line, select the ingredients you want and the counter person puts together either a burrito, a tortilla-free burrito bowl, tacos, fajitas, salads and the like. Choose among such proteins as diced adobo-marinated chicken breast, diced marinated steak (carne asada), slow-cooked spiced shredded beef (barbacoa) and slow-cooked shredded spiced pork (carnitas). There’s also a vegetarian option of guacamole, black beans, peppers and onions.  Fresh salsas also go into the mix, among them mango, salsa fresca, roasted chili-corn, salsa verde and salsa picante.

Depending upon your protein choice, dishes range from $6.99 to $7.99.
