It's still dark outside when students descend into the basement of Little Portion Friary in Mount Sinai to learn how to bake bread alongside the Franciscan brothers who live at this religious house.

There, in an on-site bakery that's been around for 30 years, it's become a Friday morning tradition to rise before dawn and set about baking more than 100 loaves of bread that will be sold to customers...
