Feeding the kids: Hearty vegetable soup

In my ongoing quest to find tasty, kid-friendly meals for you that are appropriate for the whole family, this week I chose a hearty vegetable soup. I found the recipe in "Nickelodeon SpongeBob's Kitchen Mission Cookbook," created by Stephen Hillenburg (Wiley; $16.99).

Diabolical Delight (Vegetable soup)
(Makes 8 servings)

-6 cups vegetable or chicken broth
-2 teaspoons grated fresh ginger or 1/2 teaspoon ground ginger
-1 clove minced garlic or 1/4 teaspoon garlic powder
-2 tablespoons reduced-sodium soy sauce
-1 1/2 cups shredded napa or green cabbage
-1/2 cup shredded carrot
-3 tablespoons cold water
-1 tablespoon cornstarch
-1 cup shredded fresh spinach
-1/2 cup frozen peas
-1 5-ounce package rice noodles, cooked according to package directions
-1/4 cup thinly sliced green onions (optional)

1. In a large saucepan, combine broth, ginger, garlic and soy sauce. Bring to boiling; reduce heat. Stir in cabbage and carrot. Simmer for 5 minutes or until vegetables are crisp-tender.

2. In a small bowl, stir together the cold water and cornstarch. Stir into cabbage mixture. Cook and stir until slightly thickened and bubbly. Remove from heat. Stir in spinach and peas.

3. Place noodles in soup bowls. Ladle soup over noodles. If you'd like, sprinkle with green onions.
