Feeding the kids: Creamy tomato-basil soup
In my ongoing quest to find tasty, kid-friendly food appropriate for the whole family, this week I chose a quick and easy tomato soup. I found the recipe in "The Picky Palate Cookbook: 133 Recipes for Even Your Pickiest Eaters," by Jenny Flake (Wiley; $24.99).
10-Minute Creamy Tomato-Basil Soup
-2 15-ounce cans diced tomatoes
-1/4 cup finely chopped white onion
-2 cloves garlic, minced
-12 fresh basil leaves
-1 teaspoon kosher salt
-1/2 teaspoon freshly ground black pepper
-1/2 cup heavy cream
1. Add the tomatoes, onion, garlic, basil, salt and pepper to a food processor or blender. Pulse or blend until smooth.
2. Pour the soup into a medium saucepan set over medium-low heat.
3. Add the heavy cream, stir to combine and cook for 5 minutes, stirring, until hot.
4. Serve warm. Pair the soup with grilled cheese or a green salad.
